Boysenberry Soup Recipe
- 4 c. Boysenberries
- 4 x Apples (pared, cored & Sliced)
- 4 c. Apple juice
- 3 Tbsp. Sugar
- 1/4 tsp Cinnamon
- 1 Tbsp. Cornstarch
- 3 Tbsp. Water
- Pick over berries- throw away stems & bruised berries.
- Place berries & apples in pot.
- Pour in apple juice.
- Simmer 20 min.
- Mash.
- Strain through sieve.
- Add in sugar & cinnamon.
- Mix cornstarch in water.
- Add in to soup.
- Bring to boil.
- Remove & serve warm or possibly chilled.
- If chilled, top with whipping cream.
