Trail Mix Granola Bars

  2. Prep a baking dish.
  3. For thicker bars, try a 7x11 or a couple of bread pans.
  4. For thinner bars, a 13x9 will work.
  5. Grease the pan or lay down non-stick foil.

  7. In a great big bowl: mix the oats, rice cereal, dried fruit, M&Ms, chocolate chips, and peanuts.
  8. Stir it all together with a large spatula.
  9. Have the spatula close and handy!

  11. In a medium-sized microwave safe bow, combine the honey and peanut butter.
  12. Microwave for 30-45 seconds.
  13. Stir until it is thoroughly mixed.
  14. 4.
  15. Pour your honey mixture into the oat mixture.
  16. Now, be quick!
  17. Coat the oat mixture with the honey mixture.
  18. This is easier to do while it is still hot.
  19. 5.
  20. Once coated, press the mixture into your prepared pan.
  21. You can grease your hands and press.
  22. I like to take cling wrap and wrap that around the bottom of a bread pan.
  23. Then, I use that to press the bars into the pan really firmly.
  24. This is necessary for the bars to stick together.

  26. Cover and put it in the fridge for at least 1 hour.
  27. Cut and enjoy!
  28. Do not attempt to cut them before one hour or they will be a crumbly, honey gooey mess.
  29. They will still be tasty, though.
  30. Like many homemade granola bars, freezing these for a little while helps them stick together.
  31. Store at room temperature, in the fridge or the freezer.
