Shredded Chicken In Garlic Sauce Recipe

  1. Soak cloud ears in hot water for 20 min or possibly till soft.
  2. In a medium saucepan blanch chicken breast, red pepper and green pepper in boiling water for a few seconds.
  3. (If using fresh mushrooms, blanch mushrooms also.)
  4. Heat wok or possibly other heavy skillet till warm.
  5. Add in 2 Tbsp.
  6. vegetable oil and garlic to wok and stir fry for a few seconds.
  7. Add in chicken and stir fry till well coated with garlic.
  8. Add in peppers, optional vegetables, water chestnuts, cloud ears, vinegar, wine, sugar, soy, pepper and sesame oil.
  9. Stir fry together.
  10. Add in chicken stock.
  11. Cover wok till stock comes to a boil and chicken is cooked.
  12. Remove cover.
  13. Add in scallions and stir.
  14. Add in cornstarch mix slowly, stirring constantly till it thickens to a gravy consistency.
  15. Remove to a hot serving platter and serve with white or possibly brown rice.
