Easy Scrambled Tofu with Lots of Vegetables!
- 1 block Tofu
- 150 grams Ground meat (pork or chicken)
- 1 Onion
- 1 Carrot
- 4 Shiitake mushrooms (optional)
- 1 Snow peas, spinach, komatsuna, etc
- 1 Egg (optional)
- 2 1/2 tbsp plus ~ Soy sauce
- 2 tbsp Sake
- 2 tbsp Mirin
- 1 Vegetable oil (for stir-frying)
- Drain the excess water from the tofu.
- Boil snow peas in salted water, soak in water, and cut into small pieces.
- Mince the onion, carrot, and shiitake mushrooms.
- Heat oil in a frying pan, make a scrambled egg, and transfer onto a plate.
- Wipe off the frying pan with a wet paper towel, heat oil, and stir-fry the ground meat and Step 2 ingredients.
- When the meat is cooked through, add the seasoning ingredients, and stir-fry.
- Add the tofu, and continue stir-frying.
- When the liquid has almost evaporated, turn off the heat.
- Add the scrambled egg and snow peas, mix them, and done.
- It's delicious to serve on rice.
