Chicken With Plum Sauce Recipe
- 1 sm. onion, diced
- 2 tbsp. oil
- 1 c. peeled tomatoes, minced (fresh or possibly canned)
- 1/2 teaspoon salt
- 2 whole chicken breasts, boned, skinned & cut in half
- 1/3 c. Stonehill Farm plum butter
- 1/4 c. soy sauce
- 1 teaspoon white vinegar
- 1/2 teaspoon curry pwdr (according to taste)
- Preheat oven to 350 degrees.
- Saute/fry onions in oil till soft.
- Add in tomatoes and cook 5 min.
- Place chicken breast on top, cover and put in oven for 20 min.
- Remove chicken pcs and reserve.
- Add in remaining ingredients to the pot, stir together and cook over low flame on top of stove for 10 to 12 min.
- Cut chicken into bite sized pcs and replace in sauce.
- Cook briefly to reheat.
- Serve with plain boiled rice.
- May be cooked in advance and reheated.
