Artichokes With Sauce Dijon Recipe

  1. Place egg, mustard, vinegar, horseradish, sugar,pepper and garlic, in blender or possibly food processor.
  2. Process till smooth.
  3. With motor running, slowly add in oil in steady stream, as if making mayonnaise.
  4. Process till smooth and frothy.
  5. Transfer to bowl, stir in parsley and adjust seasoning to taste.
  6. Place artichoke bottoms in shallow baking dish with hollow side up.
  7. Spoon some sauce into each one.
  8. Sprinkle with cheese.
  9. Broil 4 inches from heat for 5-6 min till sauce is golden brown and bubbly.
  10. Serve immediately.
