Upside-Down Ham Loaf
- 1 Tbsp. butter
- 1 Tbsp. brown sugar, packed
- 1/2 tsp. powdered cloves
- 3 pineapple slices, packed in juice
- 3 c. cooked ground ham
- 2 Tbsp. grated onion
- 1/4 tsp. dry mustard
- 3/4 c. bread crumbs
- 1/4 c. pineapple juice from slices
- 2 eggs, lightly beaten
- dash of cayenne pepper
- 4 oz. Swiss cheese, shredded
- Melt butter in bottom of a greased 8 1/2 x 4 1/2 x 2 1/2-inch loaf pan.
- Combine brown sugar and cloves; sprinkle on pan. Arrange halved pineapple slices over sugar mixture.
- Combine ham and remaining ingredients except cheese; pack half of mixture over pineapple.
- Sprinkle with cheese, then pack with remaining ham mixture.
- Bake, covered, at 350u0b0 about 45 to 50 minutes.
- Let stand 5 minutes.
- Turn upside down on a hot platter.
- Makes 6 servings.
