Mashed Potato Bowl
- 2 whole Russet Potatoes, Peeled
- 1 package (about 1 Oz. Packet) Brown Gravy
- 2 whole Chicken Breasts, Cut Into Cubes
- Salt And Pepper
- 1 package (10 Oz. Size) Chicken Beer Batter
- 1/2 cups Beer Or Water, Or As Needed Based On Beer Batter Package Directions
- Oil, For Frying
- 2 Tablespoons Butter
- 1/4 cups Milk (optional)
- 1/2 cups Frozen Corn
- 1/2 cups Shredded Cheddar Cheese
- Boil potatoes in water.
- Meanwhile, prepare gravy according to packet instructions.
- Lightly sprinkle chicken with salt and pepper and prepare beer batter using the mix and water or beer, following the measurements on package instructions.
- (One package of mix should yield about 1 1/2 cups beer batter.)
- Let chicken sit in the batter until youre ready to fry.
- Fry chicken in deep fryer, or in oil on the stove.
- Drain water from potatoes once thoroughly cooked and mash, adding butter and milk.
- Remove cooked chicken from oil and place on paper towels to soak up excess oil.
- Heat corn in microwave for about 45 seconds.
- Scoop potatoes into bowls and top with chicken, shredded cheese, and corn.
- Drizzle gravy on top.
