Stewed Pork Flautas with Chipotle Aioli Dipping Sauce
- Chipotle Aioli
- 1 cup KRAFT Signature Mayonnaise
- 2 Tbsp. chipotle pepper in adobo sauce, pureed
- 1/4 tsp. dark chili powder
- Stewed Pork Flautas
- Boneless pork spareribs
- 2 qt. water
- 2 each bay leaf
- 2 each dried guajillo chiles, seeded
- 2 cloves garlic, peeled
- 1/4 cup red onions, diced
- 1/2 cup canned black beans, rinsed
- 1/2 tsp. salt
- 16 each small flour tortillas
- Chipotle Aioli: Mix ingredients.
- Stewed Pork Flautas: Combine first 5 ingredients in large pot; bring to simmer.
- Cook 2 hours or until meat is tender; remove meat from pot.
- Strain cooking liquid, reserving 1/2 cup (or 1/4 cup for trial recipe); discard solids.
- Shred pork; add to reserved cooking liquid with onions, beans and salt.
- Fill each tortilla with 2 oz.
- Stewed Pork.
- Roll tightly into a cigar shape; secure with toothpicks.
- For each serving: Fry 2 flautas in 325 degrees F deep fryer 4 min.
- or until golden brown and crisp.
- Drain well.
- Cut each flauta in half and serve with 2 Tbsp.
- Chipotle Aioli.
