Stewed Pork Flautas with Chipotle Aioli Dipping Sauce

  1. Chipotle Aioli: Mix ingredients.
  2. Stewed Pork Flautas: Combine first 5 ingredients in large pot; bring to simmer.
  3. Cook 2 hours or until meat is tender; remove meat from pot.
  4. Strain cooking liquid, reserving 1/2 cup (or 1/4 cup for trial recipe); discard solids.
  5. Shred pork; add to reserved cooking liquid with onions, beans and salt.
  6. Fill each tortilla with 2 oz.
  7. Stewed Pork.
  8. Roll tightly into a cigar shape; secure with toothpicks.
  9. For each serving: Fry 2 flautas in 325 degrees F deep fryer 4 min.
  10. or until golden brown and crisp.
  11. Drain well.
  12. Cut each flauta in half and serve with 2 Tbsp.
  13. Chipotle Aioli.
