Sauerbraten
- 1 cup vinegar
- 2 teaspoons sugar
- 2 bay leaves
- 5 -6 peppercorns
- 6 -8 cloves garlic
- 14 teaspoon allspice
- 14 cup flour
- 1 -2 lb beef chuck roast
- 34 tablespoon shortening
- 18 teaspoon salt
- Wipe beef with a damp clothe.
- Place in a deep 10 inch container.
- Add vinegar and seasoning to beef, add enough water to cover.
- Place in refrigerator , covered, for 12-18 hours.
- Drain beef, reserving 1 cup of liquid.
- Mix flour with salt, sprinkle over beef.
- Heat shortening in heavy kettle or skillet.
- Add beef, cook until lightly browned on all sides.
- Turning, place rack under beef, add 1/2 cup of reserved liquid.
- Cover, cook over low heat for 3 hours or until tender.
- Add additional liquid if necessary.
- Prepare gravy, adding sugar to addltional flour.
