Sauerbraten

  1. Wipe beef with a damp clothe.
  2. Place in a deep 10 inch container.
  3. Add vinegar and seasoning to beef, add enough water to cover.
  4. Place in refrigerator , covered, for 12-18 hours.
  5. Drain beef, reserving 1 cup of liquid.
  6. Mix flour with salt, sprinkle over beef.
  7. Heat shortening in heavy kettle or skillet.
  8. Add beef, cook until lightly browned on all sides.
  9. Turning, place rack under beef, add 1/2 cup of reserved liquid.
  10. Cover, cook over low heat for 3 hours or until tender.
  11. Add additional liquid if necessary.
  12. Prepare gravy, adding sugar to addltional flour.
