Caprese Crostini
- 24 slice French bread
- 1 clove garlic
- 3 tbsp. basil oil
- 15 large grape tomatoes
- 15 large yellow pear tomatoes
- 1 tsp. unseasoned rice vinegar
- .13 tsp. salt
- 8 oz. fresh mozzarella cheese
- 6 large fresh basil leaves
- Preheat oven to 350 degrees F. Rub bread on both sides with cut sides of garlic.
- Brush one side lightly with 2 Tbsp basil oil.
- Arrange oiled side up on a baking sheet in a single layer.
- Bake until dry and lightly toasted, about 12 minutes.
- Let cool.
- In a small bowl, combine tomatoes, vinegar, and salt.
- Let stand 10 minutes.
- Top each crostini with a slice of mozzarella cheese.
- Spoon tomatoes with any juices evenly over mozzarella.
- Drizzle with remaining basil oil and sprinkle with basil.
- Serve immediately.
