Caprese Crostini

  1. Preheat oven to 350 degrees F. Rub bread on both sides with cut sides of garlic.
  2. Brush one side lightly with 2 Tbsp basil oil.
  3. Arrange oiled side up on a baking sheet in a single layer.
  4. Bake until dry and lightly toasted, about 12 minutes.
  5. Let cool.
  6. In a small bowl, combine tomatoes, vinegar, and salt.
  7. Let stand 10 minutes.
  8. Top each crostini with a slice of mozzarella cheese.
  9. Spoon tomatoes with any juices evenly over mozzarella.
  10. Drizzle with remaining basil oil and sprinkle with basil.
  11. Serve immediately.
