Barley Muffins
- 2 1/2 cups barley flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 2 large eggs
- 1/4 cup cream rich
- 1/4 cup honey
- 1 cup buttermilk
- 1 teaspoon vanilla extract
- Sift together the barley flour, baking powder, and salt.
- Beat eggs slightly.
- Combine eggs, cream, and honey with dry ingredients and mix well.
- Pour batter into muffin tin and bake at 400F (200C) for 25 minutes
