Grilled Shrimp, Mango and Guacamole Bites

  1. Grilled Cilantro Garlic Shrimp:
  2. 1) Combine garlic, cilantro, olive oil.
  3. Season with salt and pepper.
  4. Add shrimp and marinate for at least 30 minutes.
  5. 2) While the shrimp is marinating, work on guacamole and soak wooden skewers.
  6. 3) Skewer the shrimp and place on grill (medium low heat).
  7. Grill for about 2 minutes on each side or until done.
  8. Pull the shrimp off of skewers, remove tails and squeeze a little lime juice over the shrimp and season with salt if needed.
  9. Grilled Mango:
  10. 1) Use a vegetable peeler to peel mango.
  11. Slice the two wide sides off of the mango to grill (and then eat the rest of the flesh surrounding the seed).
  12. 2) Place the mango on grill on medium low heat.
  13. Grill for about 3-4 minutes on each side.
  14. Once mango is cool enough to handle, dice into small chunks.
  15. (The grilling process really brings out the sweetness of the mango).
  16. Guacamole:
  17. 1) Combine onion, jalapeno, tomatoes and cilantro.
  18. 2) Peel and pit the avocados.
  19. Add avocados, juice of 1 lime, sea salt to season and a couple dashes of onion powder.
  20. Mash the avocados and combine the mixture.
  21. Assemble:
  22. 1) Place a small spoonful of guacamole onto the tortilla chip (I like the chips with the hint of lime), topped with a grilled shrimp and a few bits of mango.
  23. Garnish with cilantro.
  24. Serve immediately.
