Sausage and Pepper Stew
- 3/4 lb. hot Italian sausage
- 1 medium yellow onion
- 1 medium green bell pepper
- 1 medium red bell pepper
- 1 1/2 tsp. Coarse salt
- 1/4 tsp. Freshly ground black pepper
- 1 can whole tomatoes
- 1/4 c. loosely packed fresh flat-leaf parsley
- Remove casings from sausage; crumble into 1-inch pieces.
- Heat a large saute pan over medium heat.
- Add sausage; cook, stirring often, until browned and cooked through, about 8 minutes.
- Remove sausage from saute pan with a slotted spoon; set aside.
- Pour off all but 1 tablespoon of fat from the pan.
- Return to medium heat, and add onion.
- Saute onion until it is just beginning to brown and soften, about 5 minutes.
- Add peppers, and continue to cook for 10 minutes more.
- Season with salt and pepper.
- Add tomatoes; bring to a boil, and then lower heat and simmer until vegetables are tender and sauce has reduced and thickened slightly, about 12 minutes more.
- Return sausage to pan, and cook just enough to heat through.
- Stir in parsley, and adjust seasoning with salt and pepper.
