Lynnes Famous Pork Tenderloin
- 1/2 cups Red Wine
- 4 Tablespoons Brown Sugar
- 4 Tablespoons Honey
- 2 teaspoons Cinnamon
- 2 cloves Crushed Garlic
- 4 bulbs Shallots, Minced
- 2 whole Pork Tenderloins
- Combine all ingredients except tenderloins in a medium mixing bowl.
- Stir together until all ingredients are combined well.
- Pour mixture into a gallon size zip-lock bag.
- Drop in the tenderloins and coat with the marinade.
- Carefully squeeze out the extra air and seal.
- Store overnight in the refrigerator.
- The next day, when youre ready, preheat the oven to 350F.
- Pour the tenderloins and all of the marinade into a baking dish (I use a 9 x 12 pyrex dish) and bake for 45 minutes.
- Take the tenderloins out of the oven and let sit about 10 minutes.
- Slice 1/2 thick medallions at an angle and dribble the leftover marinade over the slices as a sauce.
