Okra with Shallots

  1. Cut off the top stem ends and the very tips of the okra pods.
  2. You can do 34 at the same time.
  3. Now cut each pod diagonally into 34 slices, depending upon size.
  4. Pour the oil into a medium frying pan and set over medium-high heat.
  5. When hot, put in the cumin seeds.
  6. A few seconds later, put in all the sliced okra.
  7. Stir and fry for about 5 minutes.
  8. The okra will have browned a bit.
  9. Add the shallots and continue to stir and fry for about 3 minutes so that the shallots brown as well.
  10. Now turn the heat to low.
  11. Add the coriander, red chilies, and salt.
  12. Stir and keep cooking another 79 minutes or until the okra is crisp and cooked through.
  13. Add the lemon juice and stir to mix.
