Momosita's Salmon Burgers
- 14 cup red bell pepper, diced
- 14 cup yellow bell pepper, diced
- 14 cup panko breadcrumbs (only add if using fresh salmon)
- 1 garlic clove, minced
- 2 tablespoons finely chopped fresh cilantro leaves
- 1 lb salmon fillet, skinned and finely chopped (or use 14oz. canned)
- 1 teaspoon minced fresh ginger
- 14 teaspoon sambal oelek chili paste
- 1 large egg, lightly beaten
- 12 tablespoon soy sauce
- 14 teaspoon salt
- cooking spray
- In a medium bowl, combine peppers, panko, garlic, cilantro and salmon.
- In a small bowl, combine ginger, chili paste, egg, soy sauce, lemon juice, and salt; add to pepper mixture, tossing gently to combine.
- Form mixture into 4 patties.
- Lightly coat a grill pan or skillet with cooking spray.
- Heat over medium-high heat until hot.
- Grill or cook patties, 5 minutes per side, or until desired degree of doneness.
