BBQ Adobo Pork Tacos
- 1 cup canned chipotle peppers in adobo sauce
- 1 qt. OPEN PIT Original Restaurant Recipe Barbecue Sauce
- 3 qt. boneless pork shoulder, cooked, pulled
- 32 each corn tortillas (6 inch)
- 2 cups crispy onion straws
- 32 each fresh lime wedges
- Blend peppers and barbecue sauce in food processor until smooth; pour into bowl.
- Add pork; toss until coated.
- Transfer to saute pan; cook on low heat until heated through.
- For each serving: Grill 2 tortillas.
- Fill each with about 1/3 cup pork mixture and 1 Tbsp.
- onions.
- Serve with 2 lime wedges.
