Baked Potatoes with Chipotle
- 1/2 cup Miracle Whip Calorie-Wise Spread Family Dollar $3.50 thru 02/07
- 1/2 cup light sour cream
- 1/4 cup Kraft 100% Parmesan Light Grated Cheese
- 2 Tbsp. chopped canned chipotle peppers in adobo sauce
- 1-1/2 lb. (675 g) red potatoes (about 5), peeled, thinly sliced King Sooper's 5 lb For $1.88 thru 02/09
- 1/2 lb. (225 g) Mexican chorizo, cooked, drained
- 1/2 cup Cracker Barrel Shredded Part Skim Mozzarella Cheese
- Heat oven to 400F.
- Mix first 4 ingredients until blended.
- Place half the potatoes in 2-L casserole dish sprayed with cooking spray; top with half each of the Miracle Whip mixture and chorizo.
- Repeat layers; cover.
- Bake 1 hour or until potatoes are tender.
- Sprinkle with mozzarella; bake, uncovered, 5 min.
