Smothered Okra

  1. Heat oil in a 4-quart saucepan over medium-high heat.
  2. Saute okra, onion, celery, bell pepper and garlic approximately 30 minutes or until okra stops stringing.
  3. Okra will become slimy during this process and should be stirred constantly until stringing ceases.
  4. Add tomatoes and hot water; bring to a low boil and cook approximately 1 hour, stirring occasionally.
  5. Season with salt, pepper and pepper sauce.
