Spicy Tofu Scrambles With Greens

  1. Coat a large frying pan with the olive oil and place over medium heat.
  2. Add the onion and saute until tender about 4 minutes, then add garlic, tomato, olives and saute a minute more.
  3. Add chopped kale and red pepper flakes, stir and cover frying pan and let steam for three minutes, stirring once or twice.
  4. Add crumbled tofu to pan and pour over the soy sauce.
  5. Stir to combine well and keep on heat until tofu is heated all the way through, then serve.
