Garden pasta salad
- 1 medium cucumber
- 1 medium yellow summer squash
- 1 medium zucchini
- 1 medium sweet red pepper
- 1 medium green pepper
- 4 cup fresh broccoli florets
- 3 cup fresh cauliflowerets
- 1 small red onion finely copped
- 2 packages Italian salad dressing mix
- 4 1/2 cup uncooked bow tow pasta or your choice of noodles.... I tried wheat noodles this time :-)
- 1/4 cup olive oil
- 1/4 cup red wine vinegar
- 3/4 tsp salt
- 1/2 tsp pepper
- 1 cup *optional**cranraisons, or cranberry or raisons
- 3/4 cup **optional ** sliced fresh mushrooms
- 3/4 cup **optional**diced tomatoes
- 1/2 cup **optional ** sliced or diced depending on taste and size celery
- wash the first 5 ingredients, but do not dry: chop and transfer to a large Bowl.
- add the remaining vegetables ( not tomatoes or mushrooms yet, they should be added just before serving).
- sprinkle with dry dressing mix; toss to coat.
- refrigerate , covered , 4~6 he's or overnight.
- cook pasta according to package.
- drain.
- rinse with cold water.
- add to the vegetable mixture.
- in a small bowl , whisk together the remaining ingredients.
- add to the salad : toss to cost.
- if desired , add the optional ingredients, toss again.
- serve and enjoy !
- prep time : about 30 minutes, plus chilling time, plus pasta cooking time ( about 10~ 15 minutes )
- makes about 24 1 cup servings
