Greek Shrimp Salad with Feta
- 1 lb. orzo pasta, uncooked
- 2 green onions, chopped
- 1 pkg. (4 oz.) ATHENOS Traditional Crumbled Feta Cheese
- 3/4 cup KRAFT Greek Vinaigrette Dressing, divided
- 1 lb. cooked cleaned medium shrimp
- 1/2 cup quartered cucumber slices
- 1/2 cup halved cherry tomatoes
- 2 Tbsp. chopped fresh parsley
- Cook pasta as directed on package, omitting salt; drain.
- Toss with onions, cheese and 1/2 cup dressing.
- Add shrimp, cucumbers and tomatoes; toss lightly.
- Sprinkle with parsley.
- Refrigerate 1 hour.
- Toss with remaining dressing just before serving.
