Eggplants in Nanban Style Stir-fry
- 3 medium Eggplant (slim Japanese type)
- 1 tbsp Sesame oil
- 1 tbsp Mentsuyu
- 1 tbsp Sugar
- 1 tbsp Vinegar
- 1 tbsp Mirin
- 1 tbsp Sake
- 1 tbsp Water
- 1 Chopped green onion, toasted white sesame seeds
- For basic instructions on how to prepare the eggplants, see.
- Slice the eggplants about 1 cm thick.
- You don't need to soak them in water since they'll be stir fried right away!
- Mix the ingredients.
- Stir fry the eggplant in a frying pan with sesame oil.
- Brown the eggplant.
- Add the combined ingredients and simmer down.
- Be careful not to burn yourself!
- When the has thickened, transfer to a serving dish.
- Sprinkle on some chopped green onion and white sesame seeds to taste!
- You could also chill the dish before serving.
