Cherry Almond Nanaimo Bars

  1. Base: Cook butter, sugar, cocoa, vanilla and egg in saucepan over lowheat, stirring constantly until custard begins to thicken.
  2. Remove from heat and stir in coconut, crumbs and almonds.
  3. Pat firmly into a greased 9-inch square pan.
  4. Chill for 1 hour.
  5. Filling: Cream butter, cherry juice and extract.
  6. Gradually beat inicing sugar to a make a smooth spreading consistency.
  7. Stir in cherries.
  8. Spread over base and chill until firm.
  9. Top: Heat chocolate and butter, stirring until smoothly melted.Drizzle chocolate over filling.
  10. Chill.
  11. Cut into bars.
