Sunday Pot of Beans
- 1 pound Dried Pinto Beans
- 1 whole Yellow Onion, Sliced
- 2 cloves Garlic, Sliced
- 1 pound Thick Cut Bacon
- 1 Tablespoon Chili Powder
- 1 Tablespoon Chicken Bouillon
- 1 teaspoon Black Pepper
- 1 can (15 Oz.) Great Northern Beans
- Wash, sort and soak the beans overnight.
- Rinse them and put them in a large heavy duty pot.
- Cover with water and set to medium high and bring to a boil.
- While waiting for them to boil, slice the onions and garlic.
- Add that to the pot.
- Once the beans come to a boil, turn the heat down to a medium-low setting and cover with a lid.
- Cook for a couple of hours.
- Chop the bacon up and fry it in a pan.
- Add the bacon and a tablespoon or so of the grease to the pot.
- Add the chili powder, chicken bouillon, and pepper to the pot and continue cooking for another hour or two, or until the beans are nice and done.
- At the end, add a can of great northern beans to the mix and season with salt if needed.
