Sweet Potato Mock Tempura

  1. Slice the sweet potato into 1 cm thick and soak in a bowl of water.
  2. Drain and put on a heatproof dish, cover with plastic wrap and microwave for 4 minutes.
  3. Combine the ingredients in a bowl for the batter.
  4. Dust the microwaved sweet potato slices with flour (not listed).
  5. Dip the sweet potato in the batter.
  6. Fry the sweet potato with a bit more oil than you'd use for stir frying.
  7. The sweet potatoes are already cooked in the microwave, so when the batter is crispy, it's done.
  8. Dip in tentsuyu (tempura sauce) and enjoy.
