Zucchini Rounds

  1. In a mixing bowl, stir together biscuit mix, cheese and pepper.
  2. Stir in beaten eggs just until mixture is moistened.
  3. Fold in zucchini.
  4. In 10" skillet, melt margarine over medium heat.
  5. Using 2 tablespoons of mixture for each round, cook four rounds at a time for 2-3 minutes on each side (or until brown).
  6. Keep warm while cooking remaining rounds.
