Crockpot Lentil Soup
- 2 tablespoons extra virgin olive oil
- 1 large yellow onion, diced
- 1 celery, chopped
- 2 garlic cloves, minced
- 42 12 ounces diced tomatoes (1 - 28oz can plus 1 - 14.5oz can)
- 1 12 teaspoons dried thyme
- 2 bay leaves
- 4 -6 cups beef broth
- 1 12-2 cups dried lentils, rinsed and soaked over night
- Rinse and soak lentils in water overnight.
- Add olive oil to saute pan.
- Saute onion, celery and garlic until tender.
- Add all ingredients to crockpot.
- Cook on low for 8hrs or high for 4-6 hours.
