Sunday Special Pasta, Salami Combo Platter

  1. My children love pasta as well as salami.
  2. So I wanted to treat them with a combination of both on a beautiful Sunday.
  3. For the tomato salsa: Combine tomato, onion, ginger, garlic, salt and chili powder in the bowl of your mixer/food processor.
  4. Process until its chunky, then set aside.
  5. Boil the pasta in water according to package instructions, but do not overcook.
  6. Place the tomato mixture in a pan and cook on medium heat, stirring continuously.
  7. After 5 minutes add pasta and cook again for 5 minutes.
  8. Please do not over do it.
  9. The pasta should retain its shape and the sauce should not dry up.
  10. For the salami: Cut salami into even slices and lightly cook it in a microwave or skillet over medium heat, just to give it a light brown color.
  11. It should not be cooked for more than 2 to 3 minutes on each side.
  12. For the presentation: Take a flat tray.
  13. Arrange the slices of salami in the center in a row.
  14. On both sides spread the pasta mixture.
  15. Top the salami with a dollop of mayonnaise (you can do this with a piping bag if desired).
  16. You can serve extra mayonnaise in a small bowl.
