Cranberry Applesauce Muffins
- 1 cup applesauce
- 3/4 cup milk, skim, (non fat) powder
- 1 each liquid egg substitute
- 1/2 teaspoon canola oil
- 2 cups flour, unbleached all-purpose
- 1/2 cup sugar
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon cinnamon ground
- 1/2 cup cranberries coarsely
- Coat 12 muffin cups with nonstick spray.
- Combine applesauce, milk, egg and oil.
- Whisk together flour, sugar, baking powder, baking soda and cinnamon.
- Gently mix in cranberries.
- Stir into applesauce mixture, and mix until just combined.
- Divide batter among muffin cups.
- Bake at 400F (200C) until a toothpick comes out clean, about 20 minutes.
- Remove muffins from pan and place on a wire rack to cool.
