Cranberry Applesauce Muffins

  1. Coat 12 muffin cups with nonstick spray.
  2. Combine applesauce, milk, egg and oil.
  3. Whisk together flour, sugar, baking powder, baking soda and cinnamon.
  4. Gently mix in cranberries.
  5. Stir into applesauce mixture, and mix until just combined.
  6. Divide batter among muffin cups.
  7. Bake at 400F (200C) until a toothpick comes out clean, about 20 minutes.
  8. Remove muffins from pan and place on a wire rack to cool.
