Double Corn Polenta
- 1 c. milk
- 1 c. water
- 1 c. fresh or frozen corn kernels
- 1/2 c. quick-cooking polenta
- 2 tbsp. unsalted butter
- 1/4 c. grated Parmesan cheese
- 2 oz. sliced prosciutto
- In a medium saucepan, bring milk, water, and fresh or frozen corn kernels to a boil.
- Gradually add polenta, stirring constantly, until incorporated.
- Reduce heat to medium-low and simmer until thickened, 3 to 5 minutes.
- Gradually add polenta, stirring constantly, until incorporated.
- Reduce heat to medium-low and simmer until thickened, 3 to 5 minutes.
- Remove from heat and stir in butter, grated Parmesan cheese, and prosciutto.
