Southern-Style Cornbread

  1. Preheat oven to 350F.
  2. Coat 9- x 9-inch baking pan with cooking spray.
  3. Combine cornmeal, flour, sugar, baking powder, salt, and baking soda in medium bowl.
  4. Whisk together milk, egg and butter in separate bowl.
  5. Stir milk mixture into cornmeal mixture, then fold in corn.
  6. Spread in prepared pan.
  7. Bake 25 to 30 minutes, or until sides begin to brown and toothpick inserted in center comes out clean.
  8. Cool on rack before slicing and serving.
