Healthy Black Bean Salsa
- 1 (16 ounce) can black beans
- 1 (12 ounce) can white corn
- 14 cup chopped cilantro
- 12 cup chopped green pepper
- 1 medium purple onion, chopped
- 3 -4 medium tomatoes, chopped
- 1 jalapeno pepper, chopped
- 1 tablespoon canola oil
- 1 large lime, juice of
- 1 teaspoon salt
- 1 teaspoon garlic powder
- Drain and rinse black beans and white corn.
- Place in large mixing bowl.
- Add cilantro, green pepper, onion, tomatoes and jalapeno.
- Blend well.
- Drizzle canola oil and lime juice over the top of mixture.
- Add salt and garlic powder.
- Mix well.
- Cover and refrigerate for 2-3 hours.
- Serve with baked tortilla chips.
