Best Ever Caramel Corn Recipe
- 4 quarts. freshly popped corn
- 2 c. dry roasted peanuts
- 1 1/4 c. sugar
- 2/3 c. butter
- 2/3 c. dark corn syrup
- 1 teaspoon vanilla
- 1/2 teaspoon baking soda
- Preheat oven to 250 degrees.
- In large shallow roasting pan spread popcorn and nuts in large 1 1/2 qt saucepan.
- Stir together sugar, corn syrup and butter.
- Cook over medium heat stirring constantly till mix boils.
- Continue cooking for 5 min without stirring.
- Remove from heat, stir in vanilla and soda.
- Pour over popcorn and nuts and stir to coat.
- Bake for 1 hour.
- Stir every 15 min.
- Cold; break apart.
