Egg And Grits Casserole
- 1 lb. sausage
- 1 can whole potatoes, sliced or sliced raw potatoes
- 4 eggs
- 4 pkg. instant grits
- 4 slices American Deluxe cheese
- 1/2 c. milk
- 2 Tbsp. butter
- 1 chopped onion
- Slice potatoes and layer in a 9 x 13-inch pan; sprinkle with onion.
- Bake in a 325u0b0 oven while browning sausage on top of stove.
- Sprinkle browned sausage on top of potatoes; set aside. In a large pan, empty grits and add enough water to make them creamy (not runny); bring to a boil while stirring constantly. Remove grits from heat.
- Beat eggs with milk and add to grits along with the cheese and butter.
- Stir until melted.
- Pour egg grit mixture over potato sausage mixture.
- Bake at 350u0b0 for 20 to 25 minutes, until eggs set.
- Serve with fruit or juice.
