Texas Smothered Chicken

  1. Rince the chicken and pat it dry.
  2. Season it with the soy sauce, cayenne pepper and salt.
  3. Set it aside to let the flavors blend for a few minutes.
  4. In a large pan heat the oil and saute the onions and the peppers and parsley for a few minutes.
  5. Add the wine and the garlic; stir well, then add the chicken parts.
  6. Mix well over medium heat and cook slowly for about 2 hours stirring occasionally (do not cover).
  7. Add some more wine or water if needed.
  8. Serve over cooked white rice.
