Texas Smothered Chicken
- 1 (2) chicken, cut up
- 2 tsp. finely chopped garlic
- 1 cup dry white wine
- 1/2 cup fresh chopped parsley
- 1/2 cup chopped red bell pepper
- 2 cups chopped onion
- 2 tbsp. oil
- Cayenne pepper, to taste
- 2 tbsp. soy sauce
- Salt, to taste
- Rince the chicken and pat it dry.
- Season it with the soy sauce, cayenne pepper and salt.
- Set it aside to let the flavors blend for a few minutes.
- In a large pan heat the oil and saute the onions and the peppers and parsley for a few minutes.
- Add the wine and the garlic; stir well, then add the chicken parts.
- Mix well over medium heat and cook slowly for about 2 hours stirring occasionally (do not cover).
- Add some more wine or water if needed.
- Serve over cooked white rice.
