Quick Pork With Mild Spices
- 3 tablespoons vegetable oil
- 12 ounces pork tenderloin, cut into thick strips
- 1 teaspoon paprika
- 1 teaspoon ground cumin
- 1 cup chicken broth
- 4 ounces frozen peas
- 1 tablespoon Greek yogurt
- 2 ounces cilantro, roughly chopped
- Heat 1 tbs of the oil in a wok or large frying pan until very hot.
- Add the pork and stir fry for 3-4 mins until it starts to brown.
- Remove from the pan, set aside and wipe the pan out with piece of kitchen paper.
- Pour the remaining oil into the pan and tip in the spices.
- Cook over a medium heat for 1 min to release their aromas.
- Pour in the chicken broth and cook for 3-4 mins over a high heat until reduced by half.
- Throw in the peas.
- Take the pan off the heat and stir in the yogurt.
- Season if you like.Add the pork and warm through, then scatter over the cilantro.
- Serve with rice, potatoes or pasta.
