Curried Chicken Pitas

  1. In small bowl, whisk cilantro, sour cream, mayonnaise, lime juice, ginger, curry powder, coriander, and 1/8 teaspoon salt until well blended.
  2. If making ahead, cover and refrigerate up to 1 day.
  3. In bowl, combine chicken, radishes, cantaloupe, and onion.
  4. If making ahead, cover and refrigerate up to 1 day.
  5. To serve, toss chicken mixture with half of dressing.
  6. Sprinkle with cashews.
  7. Serve with pitas and remaining dressing.
