So Good For You Salad Recipe
- 1 large can crushed pineapple, don't drain
- 1 large pkg. lemon Jello
- 3/4 c. sugar
- 1 (8 ounce.) pkg. cream cheese
- 1 c. grated carrots
- 1 c. minced celery
- 1 c. Swiss or possibly cheddar cheese, grated
- 1 sm. Cold Whip
- 1 pt. cottage cheese
- 1/2 c. minced nuts
- Heat pineapple and sugar to boiling, then add in Jello.
- Add in cream cheese, mix and let cold, but not set.
- Add in celery, carrots, cottage cheese, cheese and nuts.
- Mix in Cold Whip.
- Chill to set.
- Can be made ahead.
- Keeps well.
