Winter vermicelli in fish ball soup

  1. In pot of boiling water, add in fish balls, light soya sauce and white pepper powder.
  2. Turn off heat when fish balls float on surface.
  3. Leave pot aside.
  4. Heat cooking oil in frying pan using low heat, stir fry chopped shallot till slightly browned.
  5. Leave aside.
  6. In separate pot, cook vermicelli in boiling water for not more than 2 minutes.
  7. Then put the cooked vermicelli in big bowl.
  8. Leave a bit water in it to prevent drying up.
  9. Scoop some fish ball soup into the bowl of vermicelli.
  10. Top up with generous amount of fried shallot and its oil.
  11. Garnish with coriander and white pepper powder.
  12. Ready to serve.
