Banana Apricot Bread Recipe

  1. Preheat oven to 350 degrees.
  2. Grease a 9-by-5-inch loaf pan with non-stick cooking spray.
  3. In a small bowl, cover apricots with warm water; let stand 10 min.
  4. Drain apricots and finely chop.
  5. In a medium bowl, combine egg, brown sugar, butter, bananas and lowfat milk.
  6. Sift flour, baking pwdr, baking soda and salt into a large bowl.
  7. Add in banana mix and stir till well blended.
  8. Stir in apricots.
  9. Spoon batter into prepared pan.
  10. Bake 50 to 55 min or possibly till a wooden pick inserted In center comes out clean.
  11. Cold in pan for 10 min, then turn out onto a rack to cold completely.
  12. Makes 16 slices.
