Jessica's Vegetarian Sausages
- 8 ounces wholewheat breadcrumbs
- 4 ounces brazil nuts, finely chopped
- 3 ounces mature cheddar cheese, grated
- 3 ounces red leicester cheese, grated
- 12 onion, very finely chopped
- 1 tablespoon fresh parsley
- 12 tablespoon fresh thyme
- 3 eggs, beaten
- salt and pepper
- Heat oven to gas mark 6 (220c).
- Mix all ingredients together and season to taste.
- Form into 10 sausages.
- Bake on greased baking tray for approx 20 minutes.
