Delicious Holiday Mince Pie with Beef
- 9 quarts apples prepared as for pie
- 4 pounds beef chopped and cooked
- 2 pounds suet chopped
- 3 pounds sugar
- 2 quarts apple cider
- 4 pounds raisins, seedless
- 3 pounds currants
- 1 1/2 pounds citron chopped
- 1/2 pound candied orange peel dried
- 1/2 pound candied lemon peel dried
- 1 each lemon juice and rind of
- 1 tablespoon cinnamon
- 1 tablespoon mace
- 1 tablespoon cloves
- 1 x salt and black pepper to taste
- 2 whole nutmeg grated
- 1 gallon sour cherries with juice
- 2 pounds nuts broken
- 1 teaspoon coriander ground
- 1 x brandy
- 1 x pie shell (9 inch) double
- Cook the ingredients SLOWLY for 2 hours.
- Prepare your favorite pie shells (for 2 crust pie) and heap with mincemeat; flavor w/ more brandy of course and bake at 450F (230C) for about 30 minutes.
