Chocolate Pecan Meringues

  1. Line a cooky sheet with parchment paper.
  2. (This prevents the delicate candy from crumbling when removed from the pan.)
  3. Beat egg whites, salt and cream of tartar until light and frothy.
  4. Do not underbeat!
  5. Add sugar gradually, beating until very stiff peaks are formed.
  6. Add vanilla while beating.
  7. Fold in chocolate pieces and nuts.
  8. Drop by teaspoonfuls about 2 inches apart.
  9. Bake at 300 for 15 minutes.
