Spicy Meatballs and Couscous
- 16 frozen meatballs (Italian style are fine)
- 1 (10 ounce) can diced tomatoes with green chilies
- 1 (8 ounce) package couscous
- chopped peanuts (optional)
- Place meatballs in a pot, cover with the tomatoes and chilis, and bring to a boil, stirring occasionally.
- When boiling, reduce heat, cover, and simmer 8-10 minutes.
- Prepare couscous according to package instructions.
- Spoon meatballs and sauce over couscous and serve, sprinkling with peanuts if desired.
