Creamed Cornbread
- 2 cup yellow corn bread
- 1 tsp salt
- 1 tbsp sugar
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1 cup buttermilk
- 2 eggs
- 1 cup cream corn
- 2 tbsp canola oil for cast iron skillet- optional
- Preheat oven to 425F
- In a bowl, combine cornmeal, salt, sugar, baking powder, and baking soda.
- Whisk together.
- In a large bowl, combine milk, eggs, and cornmeal.
- Add dry ingredients to moist ingredients and stir.
- Bake until golden brown and springs back upon touch.
- About 20 minutes.
