Passion Fruit Dressing

• 1 tablespoon passion fruit syrup
• 1/4 cup red wine vinegar
• Salt and freshly ground black pepper to taste
• 1/4 teaspoon Dijon-style mustard
• 1/2 cup extra-virgin olive oil

1. Combine the passion fruit syrup, vinegar and mustard in a small non reactive bowl and whisk them well.
2. Gradually drizzle in the olive oil continuing to whisk until the dressing is well mixed.
3. Serve immediately
