Beignets

  1. Place water and butter in large saucepan.
  2. Bring to boil on medium-high heat.
  3. Add flour and salt; mix well.
  4. Reduce heat to low; cook until mixture forms a ball, stirring constantly.
  5. Remove from heat.
  6. Add eggs, one at a time, stirring until well blended after each addition.
  7. Stir in cheese.
  8. Heat oil in heavy 3-qt.saucepan or deep-fryer on medium heat to 350F.
  9. Carefully add rounded teaspoonfuls of batter, a few at a time, to hot oil.
  10. Cook until golden brown, turning once.
  11. Drain on paper towels.
