Pork Marsala
- 8 fast fry pork loin
- 1 teaspoon salt, and
- white pepper
- 2 tablespoons flour, plus
- 1 teaspoon flour
- 2 tablespoons olive oil
- 1 large shallot, finely chopped
- 2 garlic cloves, minced
- 6 ounces button mushrooms, thinly sliced
- 12 teaspoon dried Italian herb seasoning
- 12 cup sweet marsala wine
- 12 cup chicken broth
- 1 teaspoon butter, softened
- 14 cup water
- Sprinkle pork with salt and pepper.
- Dredge in flour .In a skillet,heat oil,cook pork ,in batches and turning once,until just a hint of pink.transfer to plate.
- saute shallot and garlic until soft.Add mushroom,italian seasoning saute until golden
- Add Marsala,cook until reduce by half.Add broth and 1/4 cup of water,simmer until reduced by half.
- Meanwhile make a paste with the butter and flour stir into sauce and cook until thickened.return pork to pan and heat through about 5-7 minutes.
